Ingredients:
Pastry for 2 crusts
8 cups sliced, peeled assorted baking apples - about 3 lbs. (Granny Smith, Cortland, Jonathan)
2 Tablespoons lemon juice
3/4 cup white sugar
1/4 cup brown sugar
1/4 cup all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 Tablespoons butter
1 egg yolk
1 Tablespoon milk
 
Directions:
1. In a large bowl, toss the sliced apples with lemon juice. 2. Combine sugars, flour, cinnamon and nutmeg; add to apples and toss well to coat. 3. Fill pastry lined 9 inch pie pan with apple mixture. Dot with butter. 4. Place second crust on top of pie filling, cut slits in top of crust to vent. Seal the edges of the crust with a fork or by hand. 5. In a small bowl, beat the egg yolk and milk. Brush mixture over top crust. 6. Bake at 425 degrees F for 15 minutes. 7. Reduce heat to 350 degrees F and bake 40-45 minutes more or until crust is golden and filling is bubbly.

Strawberry Cheescake!
Ingredients:
 
1 cup graham cracker crumbs
3 Tablespoons butter, melted
3 Tablespoons sugar
2 packages (8 oz. each) cream cheese, softened
1/2 cup sugar
1 Tablespoon lemon juice
1 teaspoon grated lemon peel
1 cup sour cream
3 eggs
1 Tablespoons cornstarch
1 package (10 oz.) frozen strawberries, thawed
1/2 pint fresh strawberries, sliced
 
Directions:
 
1. Preheat oven to 325 degrees F
 
2. Mix cracker crumbs, butter and sugar. Press firmly into bottom of pan.
 
3. Bake 10 minutes, remove from oven and set aside.
 
4. Raise oven temperature to 350 degrees F.
 
5. Beat 1/2 cup sugar, cream cheese, lemon juice and lemon peel with electric mixer on medium speed until well blended.
 
6. Add sour cream; mix well. Add eggs, 1 at a time, mixing on low speed after each egg is added just until blended. Pour into crust.
 
7. Bake 50 minutes or until center is almost set. Cool.
 
8. Drain strawberries, reserving liquid. In a medium saucepan add enough water to reserved liquid to measure 1/2 cup then mix in cornstarch, blending well.
 
9. Bring to boil on medium heat, stirring constantly. Boil 1 minute. Cool, then stir in the strawberries and spread evenly over cooled cheesecake.
 
Top cheesecake with sliced strawberries. Refrigerate at least 4 hours before serving.

Ingredients:
• For the Croutons:
• 2 large garlic cloves
• Pinch of salt
• 3 tablespoons virgin olive oil
• 2 cups French baguette slices cut up into 1/2 inch cubes (white bread works too)
 

• For the Salad:
• 1 large egg
• 1 teaspoon Worcestershire sauce
• 3 tablespoons fresh lemon juice
• 1 medium garlic clove, crushed
• 1 pinch salt
• 1/2 teaspoon freshly ground pepper
• 1 1/2 teaspoons anchovy paste or 4 flat anchovies
• 1 teaspoon capers
• 1 teaspoon Dijon mustard
• 1/3 cup virgin olive oil
• 2 medium heads of romaine lettuce -- outer leaves removed
• 1/3 cup Parmesan cheese -- grated
How To Make At Home:
For the Croutons
Combine garlic, oil, salt, and bread cubes in a bowl. Mix until cubes are coated evenly. Spread the coated cubes onto a baking sheet and bake until the croutons are golden. This should take about 10 minutes.
For the salad
Bring a pot of boiling water to boil, add egg and cook for just 45 seconds....NO MORE. This is coddling the egg. Remove from heat and let it cool off.
Meanwhile, mix the Worcestershire sauce, lemon juice, garlic, salt & pepper, anchovy, mustard and capers in a bowl. Crack egg and add to these ingredients. Whisk until smooth.
Now for the tricky part. Slowly add the oil in a steady stream while constantly whisking again until smooth. Reason: if you add the oil too quickly, the dressing will be separate and not emulsify.
To serve
Tear the romaine lettuce into 1-2 inch pieces and add them to a large bowl (wooden if you have one). Add half the dressing, toss, add remaining dressing, Parmesan cheese, and croutons and toss again. Serve on chilled plates

Ingredients
 
4 eggs
2/3 cup milk
2 teaspoons of cinnamon
8 thick slices of 2-day-old bread, better if slightly stale
Butter
Maple syrup
 
Method
 
1) Beat eggs, milk, and cinnamon together.Whisk until well blended. Pour into a shallow bowl.
 
2 )Dip each slice of bread into the egg mixture, allowing bread to soak up some of the mixture. Melt some butter (or use vegetable oil) over a large skillet on medium high heat. Add as many slices of bread onto the skillet as will fit at a time. Fry until brown on both sides, flipping the bread when necessary.
 
3 )Serve hot with butter, maple syrup

Ingredients:
 
1/2 cup Butter
1 cup Sugar
2 Eggs
2 cup Flour
2 tsp Baking powder
1/2 tsp Salt
1/2 cup Milk
1 tsp Vanilla
2 cup Blueberries, divided
Sugar mixed with cinnamon, for topping
 
Steps:
 
Cream together butter and sugar.
 
Add eggs, one at a time and mix until blended.
 
Sift together the flour, baking powder, and salt.
 
Add alternately with milk and vanilla.
 
Mash 1/2 cup blueberries; stir into batter.
 
Add remaining whole berries.
 
Grease muffin tins. Pile batter high.
 
Sprinkle with sugar/cinnamon topping.
 
Bake at 375 degrees F. for 30 to 35 minutes.

FROZEN HOT CHOCOLATE
Ingredients;
~3 Tablespoons Granulated Sugar
~1 package Hot Cocoa Mix (about 3 Tablespoons)
~2 Tablespoons Unsalted Butter
~⅓ cups Semi-Sweet Chocolate Chips
~⅓ cups White Chocolate Chips
~12 ounces, fluid Can Evaporated Milk, Divided
~4-½ cups Ice
~Whipped Cream, To Taste
~Mini Marshmallows, To Taste

Directions :)
~Combine sugar, cocoa mix, and butter in the top of a double boiler that is set over gently boiling water. Stir often until melted and a smooth paste forms.
~ Add semi-sweet & white chocolate chips; stir. When chips begin to melt, slowly stir in 1/2 cup of evaporated milk. Stir until smooth.
~Cool to room temperature.
~Combine the chocolate base mixture, the remaining evaporated milk and ice in a blender and cover. Blend until smooth.
~ Pour into frosty glasses. Top each with whipped cream. Sprinkle with additional chopped chocolate chips & mini marshmallows, if desired.

Home Made Waffles! (without a waffle iron)
Ingredients:
Pancake or waffle mix
Egg
2 tablespoons oil
Milk
Mixing bowl
Wire whisk
1/4 measuring cup
Sandwich press

Combine one egg, 1 1/4 cup original pancake mix, one cup milk and two tablespoons oil in a large bowl.

Stir all ingredients together, using a wire whisk.

Preheat the sandwich iron.

Pour 1/4 cup of the waffle batter onto the sandwich iron and close the top.

Allow waffle to cook until it's golden brown. You may need to open iron occasionally to check on its status. A standard cooking time is between two and five minutes, depending upon the temperature of the iron.

Remove the waffle from the sandwich iron. To serve, top with syrup or other waffle toppings.

Ingredients:
- 2 eggs
- 1/2 cup oil
- 1 cup milk
- 1 teaspoon vanilla
- 1 3/4 cups plain flour
- 1/2 cup sugar
- 1/4 cup cocoa
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup semi-sweet chocolate chips
- extra chocolate chips, to sprinkle on top

Directionsssss:
 
~Preheat the oven to 200 C* and prepare cupcake tray buy putting some cooking grease and cupcake liners.

~once your done with that, mix the eggs, oil, milk & vanilla in a large bowl

~in a smaller bowl, mix the flour, sugar, cocoa, baking powder, salt and chocolate chips

~Combine them both, and fold completely until mixed as one.

~Spoon into prepared pan and sprinkle choc chips of top of each. Bake at 200C for 20 minutes.

~Remove from pan and cool on rack. These are nice sprinkled with extra chocolate chips on top of each muffin before baking.

S'mores!
Break a large graham cracker into two parts. One is for the top of your s'more and one is for the bottom.
 
Place one graham cracker part on a plate and top it with a large marshmallow.
 
Put in the microwave on High for 10 to 12 seconds or until the marshmallow doubles in size.
 
Remove the plate from the microwave.
 
Top the marshmallow with a square of chocolate and then with the remaining graham cracker part.
 
Squeeze down until the marshmallow begins to puff out the sides of the s'more.

Ingredients;
-300g all purpose flour
-3/4 teaspoon salt
-1 teaspoon baking powder
-2 tablespoons cocoa powder (unsweetened)
-20g liquid red food coloring
-300g white sugar
-120g butter, softened
-2 eggs
-1 teaspoon pure vanilla extract
-240ml buttermilk, (you can also add 1 teaspoon white distilled vinegar to 240ml milk and let stand for 10min)
-1 teaspoon white distilled vinegar
-1 teaspoon baking powder

Directions:

-Preheat the oven @ 175ºC and line 24 muffin cups with white muffin papers:
-In a bowl mix flour, salt and 1 teaspoon of baking powder.
-In another small bowl mix the cocoa powder with the red food coloring until it forms a thin paste.
-In a large bowl beat the softened butter with the sugar until fluffy and add the eggs one by one.
-Mix well with a mixer and add the red cocoa paste and vanilla extract, mix until well combined.
-Add alternately 1/2 of the flour mix and 1/2 of the buttermilk, until the whole 300g flour and 240ml buttermilk is well combined with the paste.
-In a small separate bowl mix 1 tablespoon of vinegar with 1 tablespoon of baking powder and add the fizzing mix to the batter.
-Mix everything until well combined and fill in the 24 paper cups until there 3/4 full.
-Bake the cupcakes for 20min – don’t forget to do the toothpick test after 18min, as you might need less time. Let the cupcakes cool well before frosting….

Vanilla Cream Frosting
 
Ingredients;
-400g Cream cheese
-120g butter, softened
-250g powdered sugar
-1 teaspoon pure vanilla extract

Directions

-Mix the cream cheese with the mixer and add the softened butter, mix until creamy.
-Slowly stir in the powdered sugar and vanilla extract and beat until fluffy.
-Frost the cupcakes and decorate with your favorite red topping.
